So means “in this way.”
Must means “young wine.” That’s if “must” is supposed to be a noun. Young wine has stems, leaves and grape mash. Prior to modern environment control, it was traditionally stored in containers underground. It reminds me of how Native American peoples stored their grains in underground vessels to preserve them for the future.

Must was something I dug into last night and started thinking about the story ff tells about dancing around his hat when decision was made to move to NM. Can't find it now but there is a hat dance in done in South America during the grape harvest.
