Hi Minotaur, excellent question. Your list is wonderful. I only had one related to this chase: I had never been to the USAFA and adjacent Rampart Range despite it being a short hour-ish drive from home. I've been outdoors all over my home state of CO but somehow missed the USAFA!

Here are only a few to start with... Colorado: Telluride Ouray Million Dollar Highway Gunnison Marble Bear Creek Engineer Pass Silverton Bighorn area Cumbres & Toltec Scenic Railroad Renting a jeep and taking the trails in the Uncompahgre National Forest. That's a bucket list item I highly recommend for anyone!
New Mexico: Red River Brazos Chama River Eagle Nest Cimarron Apache Pass Wheeler Peak Valles Caldera (especially before it burned) Jemez Springs Anywhere and everywhere in the Rockies!! There wasn't anywhere in CO or NM where we traveled that wasn't amazingly beautiful. We both love the mountains and geology. We got to see places we likely would not have seen if it were not for TTOTC. -TW
