It does seem like he is generalizing to any 80 year old man. There may be some who could hike it but we are lead to believe Forrest has had trouble walking

You have to consider the context of why Forrest brought up 80-year-old men going up and down canyons. It was in reference to Randy -- he was implying that Randy's route was unrealistic (I would say absurd) since it would have required Forrest to go down and up and down and up a steep canyon carrying 20+ pound loads on each descent. Forrest was attempting to steer searchers toward more realistic solutions, and in so doing, improve their safety.
